Surveying the Food Safety Training Needs of Environmental Health Specialists in the U.S.

The ultimate responsibility to produce and process safe foods at the retail level lies with the operator. The high percentage of establishments found to be out of compliance with food safety standards, however, suggests that the retail food service industry needs help. Many regulators offer help in the form of food safety training and education. An online survey of food safety education and training needs was answered by 346 environmental health professionals. Survey participants felt that effective and relevant food safety training for food workers and managers requires both adequate resources and effective delivery. With limits on time, resources, and funding, regulators may themselves need help to provide education and training.
