The main purposes of using the Rotavapor in kitchens are to concentrate non-volatile components in a mixture. An example would be removing water from blood orange juice to leave behind pure, fresh flavours. Another use would be to extract desirable flavours and volatile aromas from a blend of fruit, herbs and alcohol without excessive heat.
