Customer: Aulis Research and Design, Cumbria, UK
A research centre dedicated to technical innovation in cooking involving agricultural, historical and territorial awareness.
Application: Molecular Gastronomy
The main purposes of using the Rotavapor in kitchens are to concentrate non-volatile components in a mixture. An example would be removing water from blood orange juice to leave behind pure, fresh flavours. Another use would be to extract desirable flavours and volatile aromas from a blend of fruit, herbs and alcohol without excessive heat.
Equipment: Rotavapor® R-210, Vacuum pump V-700 + V-850
Aulis Research and Design make use of a complete BUCHI evaporation system to concentrate their flavours.
Benefit / Conclusion: Easy to use system
Integrated evaporation solutions are available for Molecular Gastronomy applications. The system is easy to use which is applicable for users in this market as they are not from a laboratory background and generally have little experience of using chemistry related equipment. The BUCHI Rotavapor is becoming an established tool for top level chefs and is regularly seen on prime time TV cookery programmes.
