Kelp Blue - Alginates

Alginates are polysaccharides only found in brown seaweed. Up to 40% of the dry weight of macrocystis are alginates. Alginates can be used as high quality food thickeners and in bio-films and bio-packaging as a more sustainable resource.  Alginates have antimicrobial properties, are highly viscos in aqueous solutions (texturizing) and are biodegradable and biocompatible.
