The water can be separated from the fat due to their different densities. The separation is done in two phases: the fats rise to the surface and the water stays on the bottom. The effluent is collected in the intermediate part, thus preventing the fats leaving. The fats separator must be preceded by a desander that will retain the sludge and sand. The effluent containing the fats must be channelled separately from the sewage discharge.
