Indicator paper for the determination of water in butter according to DIN 10 311 The storage life of butter is closely linked to the size of the water and buttermilk particles it contains. For this reason it is important to check the water distribution during the manufacturing process and before storing larger quantities. The WATOR indicator paper allows an exact means for controlling the water distribution. Evaluation charts according to the 5-point evaluation system are available on request. On contact with water WATOR develops dark-blue spots, the size and number of which is correlated to the distribution of the water in the butter.
