La digestión anaeróbica permite la valorización de los subproductos y las aguas residuales de la industria de procesamiento de alimentos y bebidas, como lecherías, mataderos y cervecerías. El concepto principal detrás de una planta de conversión de residuos en energía es utilizar completamente la energía contenida en los residuos antes de su eliminación. La planta convierte los subproductos y las aguas residuales en biogás (una mezcla de metano y dióxido de carbono), mediante un proceso biológico llamado digestión anaeróbica. El biogás es un recurso renovable porque su ciclo de producción y uso es continuo y no genera dióxido de carbono.
