Stainless Steel Fat Separators
Animal fats and vegetable oils cannot be discharged into sewers, as over time they would clog up the conduits. It is particularly forbidden and the places where these substances are used have to be fitted with structures intended for fat separation. Stainless steel separators are manufactured under European technical standard EN 1825 and German standard DIN 4040. The water enters the separator through an elongated deflector that allows the incoming flow to be slowly and uniformly distributed. Fats and oils are separated and rise to the surface through the effect of gravity. In the course of operation a floating layer is generated that gradually increases in thickness. When it reaches maximum storage volume the fats have to be removed. They can be installed in restaurants, cafeterias, pizzerias, hotel kitchens, etc. They are quick and simple to install, without the need for building work. Separators can be installed directly underneath the work surfaces.

The fat separator should be installed on a regular and horizontal plane and its stability should be ensured. Intake connection should be made as close as possible to the fats area and the outlet connection as close as possible to the sink drain. The connection is with standard DN 65 pipes.
At first use, the fat separator cover should be removed to check that the water fills up to overflow level. Once this has been checked, the cover should be replaced.
- Close the stopcock to the fat separator.
- Remove the cover to check the level of fat.
- When the fat level exceeds the water level by 1 cm, remove the fat with a strainer or a spatula designed for this procedure.
- For thorough cleaning, remove the separator manifold.
- It is recommended to clean the chamber after emptying the corresponding water at regular intervals depending on how much it is used.
- To empty the water from the chamber, the valve situated at the bottom of the outlet side of the sink should be operated.
